Vegan Fruit Cheesecake

Delicious Vegan Fruit Cheesecake that is refreshing to eat during hot summers.

  1. Preheat oven to 350F
  2. In a large bowl, add the cream cheese, sugar and beat until light and fluffy. Then add lemon juice, vanilla extract, salt and continue mixing until well combined.
  3. Add the cream cheese mixture into the prepared graham crust and bake for 30 minutes.
  4. Allow to cook for about 20 minutes, then place in the fridge for about 3-4 hours or best overnight.
  5. Once the tart has set, add assorted fruit and decorate.
