Ube Cheese Pandesal

Here's classic Filipino pandesal with an added ube flavor and cheese filling for a delicious twist. This soft and fluffy bread is easy to bake and perfect for breakfast, brunch, or snacks!

Ingredients

  • 1 cup whole milk warmed at 150 degrees Fahrenheit
  • ½ cup granulated sugar + 1 tablespoon
  • 2 teaspoons instant dry yeast
  • 2 cups all-purpose flour
  • ¾ cups bread flour
  • ¼ teaspoon salt
  • ½ cup vegetable oil
  • ½ teaspoon vanilla extract
  • 1 tablespoon ube flavor extract
  • 1 cup cheddar cheese cut into cubes
  • ½ cup bread crumbs

Instructions

  • Combine warmed milk, a tablespoon of white sugar, and instant dry yeast in a bowl and allow it to bloom for 10 minutes, then set aside.
  • In a mixing bowl, add all-purpose flour, bread flour, white sugar, salt and whisk until combined.
  • Next add the yeast mixture, vegetable oil, vanilla essence, ube extract, and mix until the rough dough forms.
  • Place the dough hook attachment onto your stand mixer, then K=knead the dough for 10 minutes, or if you are doing it by hand, knead it for 13 minutes.
  • Place the dough in a greased bowl and cover it with cling film and allow it to stand for 1 ½ half hours until doubled.
  • Punch the dough and divide the dough into 20-22 equal portions.
  • Then flatten the dough, add in the cheese cubes, seal, and shape into a ball.
  • Line a baking sheet with parchment. Then roll the dough into the breadcrumbs and place the prepared dough into the prepared baking sheet.
  • Cover with a moist clean towel and let it rise for another 30 minutes.
  • Bake in a preheated oven for 14 minutes at 350 degrees Fahrenheit.
  • Allow it to cool for a bit before serving.
