Ingredients
1 ½cupswater
1 ½cupswhite vinegar
¼cupbrown sugar
⅛cupginger slices
½cupwater spinach stalkchopped
¼teaspoonsalt
1cupbitter gourd (bitter melon)chopped
1cupeggplantchopped
½cupred onionssliced
½cupgrape tomatoescut in half
1largechillitorn in half
Instructions
In a large pot, add water, white vinegar, brown sugar, and mix until the sugar granules are dissolved, then place on the heat and bring the mixture to a full boil.
Add in ginger slices, water spinach stalks, salt, and reduce to simmer for 2 minutes.
Then add in bitter gourd, chopped eggplant, cover the pot with the lid and allow it to simmer for another 3 minutes.
Add in red onions, grape tomatoes, chili, and continue simmering for another 2 minutes.
