Paksing Demonyo

A simple yet delicious Filipino dish made with vegetables stewed in vinegar. It's a great recipe for a flavorful vegetarian lunch or dinner with the whole family!

Ingredients

  • 1 ½ cups water
  • 1 ½ cups white vinegar
  • ¼ cup brown sugar
  • cup ginger slices
  • ½ cup water spinach stalk chopped
  • ¼ teaspoon salt
  • 1 cup bitter gourd (bitter melon) chopped
  • 1 cup eggplant chopped
  • ½ cup red onions sliced
  • ½ cup grape tomatoes cut in half
  • 1 large chilli torn in half

Instructions

  • In a large pot, add water, white vinegar, brown sugar, and mix until the sugar granules are dissolved, then place on the heat and bring the mixture to a full boil.
  • Add in ginger slices, water spinach stalks, salt, and reduce to simmer for 2 minutes.
  • Then add in bitter gourd, chopped eggplant, cover the pot with the lid and allow it to simmer for another 3 minutes.
  • Add in red onions, grape tomatoes, chili,  and continue simmering for another 2 minutes.
  • Best served with steamed rice white.
