Ingredients
2tablespoonsvegetable oil
1largeeggbeaten
4cupscooked rice
1cupsweet peas
½cupfinely diced carrots
1 ¼teaspoonsalt
1tablespoonsoy sauce
¼teaspoonground black pepper
⅙cupcrispy garlic
1tablespoonchopped green onions
Instructions
In a wok over medium heat, add oil.
Add the beaten egg and cook for 2 minutes while stirring constantly
Stir in the cooked rice and cook for 5 minutes on high heat while stirring constantl
Add the sweet peas, carrots, salt, soy sauce, and ground black pepper, mix well and continue sauteing for another 5 minutes.
Add the crispy garlic and chopped spring onions; mix well and continue cooking for another 2 minutes on high
Transfer to a serving plate and serve immediately
Notes
You can add other vegetables you like, such as celery, chopped mushrooms, red bell pepper, and a choice of protein for a one-punch meal.
It is better to use day-old rice rather than newly cooked rice as it has less moisture and will not turn mushy when it hits the pan
