Easy Garlic Fried Rice

A quick and easy fried rice recipe with an added fried egg and veggies that are perfect for a healthy and savory vegetarian breakfast or weeknight meal!

Ingredients

  • 2 tablespoons vegetable oil
  • 1 large egg beaten
  • 4 cups cooked rice
  • 1 cup sweet peas
  • ½ cup finely diced carrots
  • 1 ¼ teaspoon salt
  • 1 tablespoon soy sauce
  • ¼ teaspoon ground black pepper
  • cup crispy garlic
  • 1 tablespoon chopped green onions

Instructions

  • In a wok over medium heat, add oil.
  • Add the beaten egg and cook for 2 minutes while stirring constantly
  • Stir in the cooked rice and cook for 5 minutes on high heat while stirring constantl
  • Add the sweet peas, carrots, salt, soy sauce, and ground black pepper, mix well and continue sauteing for another 5 minutes.
  • Add the crispy garlic and chopped spring onions; mix well and continue cooking for another 2 minutes on high
  • Transfer to a serving plate and serve immediately

Notes

  • You can add other vegetables you like, such as celery, chopped mushrooms, red bell pepper, and a choice of protein for a one-punch meal. 
  • It is better to use day-old rice rather than newly cooked rice as it has less moisture and will not turn mushy when it hits the pan
