Ingredients
1tablespoonvegetable oil
2cupsmushrooms,minced
4clovesgarlic,minced
1smallred onion,diced
1largegreen cabbage, diced
2teaspoonginger,sliced
½teaspoonchili flakes
1red bell pepper,diced
1tablespoontomato paste
1peeled carrot,diced
1cuppeeled chayote,diced
4 ½cupsvegetable broth
½teaspoonsalt
¼teaspoonground black pepper
Instructions
Add oil to a heated pot over medium heat and saute mushrooms for 3 minutes while stirring constantly.
Stir in the onions and minced garlic; saute for another minute.
Mix in diced cabbage, sliced ginger, chili flakes, diced bell peppers, tomato paste, diced carrots, and chayotes.
Pour the vegetable broth and bring the mixture to a quick boil.
Reduce to a simmer for 15 minutes.
Season with salt and ground black pepper and serve immediately.
Notes
feel free to use purple cabbage if you can't find green cabbage
