In a saucepan over high heat, add water, sugar, cinnamon and bring to a rolling boil.
Next, add apples and boil on low for 5-7 minutes, then remove and place on a parchment lined tray and bake at 350 for 15-20 minutes
Remove and allow to cool completely. Apples should be mostly crunchy with a slight chew.
