Vegan Meatballs

Mashed Poatoes
In a large pot over high heat, bring water to boil then add diced potatoes, about 20 minutes
When tender, remove from heat, drain, then transfer to a large bowl.
Add garlic, butter, turmeric, parsley, salt and pepper to taste, then mash potatoes while hot, set aside.
Vegetarian Balls
In a large mixing bowl, add white beans and mash with a fork.
Add oats, onion, carrots, dried thyme, dried basil, dried oregano, cayenne pepper and mix until it forms into a dough.
Heat oil in a large non-stick pan over medium high heat, then roll the dough into balls and fry each side until golden brown.
Gravy
In a small bowl, mix cornstarch with warm water, set aside.
Heat a pan on low medium heat with butter.
When melted add onion and garlic and cook until tender.
Pour vegetable broth, peas, herbs and bring to a simmer, then pour cornstarch mixture and cook until thickened.
Prepare your dish with mashed potato, followed by vegeballs and gravy on top.
Best served immediately.
