Gluten Free Gingerbread Men Cookies

Simple, soft, and delicious gingerbread men cookies made with gluten-free flour, spices, sugar, and molasses which makes perfectly-spiced cookie treats for loved ones this holiday season!

Ingredients

  • 2 cups gluten free baking flour
  • 1 tablespoon cornstarch
  • 1 ½ teaspoons ground ginger
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon cloves
  • ¼ teaspoon salt
  • 6 tablespoons butter softened
  • ½ cup brown sugar
  • ½ cup molasses
  • 1 egg

Instructions

  • In a large bowl, whisk together the flour, cornstarch, ground ginger, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt; set aside.
  • In the bowl of a stand mixer, add the butter, brown sugar and beat using the paddle attachment until smooth and creamy.
  • Add the molasses and egg and beat until well combined.
  • Add the dry ingredients and mix until a soft dough forms.
  • Transfer the dough to a zip top bag and press into a disk. Chill the dough for at least four hours best overnight.
  • When ready to bake, preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  • Roll the dough out on a floured surface until it’s around ¼ inch thick. Use cookie cutters to cut out shapes. Continue rolling the dough and cutting out shapes until all the dough has been used.
  • Place the cutouts on the lined baking sheet and bake in the preheated oven for 8 to 10 minutes, until the edges are starting to brown.
  • Allow the cookies to cool on the baking sheet for five minutes, then transfer them to a wire cooling rack to cool completely before serving.
