Vegan Shortbread Cookies

Here's a vegan version of the classic shortbread cookies that are super easy to make, delicious, and perfect for holiday cookie treats!

Ingredients

  • 2 cups all purpose flour
  • 1 cup vegan butter
  • ¾ cups granulated sugar

Instructions

  • In a large bowl, add flour, butter, sugar and mix until the dough comes together.
  • Form the dough in a ball, then wrap it with plastic wrap and allow it to firm up in the fridge for 30 minutes or best overnight. (Dough will be firm)
  • Preheat oven to 350F, and form 42 balls and place each on a baking tray. Flatten with a fork or the palm of your hand.
  • Bake for 16 - 18 minutes or until light golden and allow to cool down before serving.
