Ingredients
2cupsgluten-free flour blend
1teaspoonbaking soda
½teaspoonsalt
½cupvegan butter
¾cupbrown sugar
½cupgranulated sugar
⅓cupapplesauce
2tablespoonsflaxseed
2teaspoonvanilla extract
1 ½cupsvegancarob, or chocolate chips
Instructions
Preheat oven to 350F and prepare cookie sheets using parchment paper or baking mat.
In a large bowl whisk together the flour, baking soda, salt and set aside.
In a medium size bowl add the butter, brown sugar, granulated sugar and mix until light and fluffy. Next add the applesauce, flaxseed, vanilla extract, and continue mixing until well combined.
Take the flour mixture and make a well in the center, then add the wet ingredients, chocolate chips and mix until cookie dough forms.
Using a small cookie scooper, scoop the cookies on the baking mat and bake only for 7-8 minutes. Remove from oven and transfer cookies to cookie rack to allow to cool.
