Carrot Cake Oatmeal

  • 1 cup carrot shredded
  • 1 ¾ cups dairy-free milk
  • ¾ cups oats
  • ¼ cups raisin
  • 1 tablespoon vegan butter
  • 2 tablespoon agave syrup
  • ¼ teaspoon cinnamon powder
  • ¼ teaspoon nutmeg powder
  • ¼ teaspoon cardamom powder
  • pinch of cloves powder
  • Banana peanut butter, almonds for garnish


  • In a non-stick pot over medium heat, add butter and allow it to melt.  Then add the carrot and cook for about 30 seconds.
  • Next mix in the spices, raisins oats and cook until the carrot are tender.
  • Pour milk, agave syrup and stir until you achieve a thick consistency, about 5-8 minutes. Remove from heat and transfer to 2 serving bowls.
  • Garnish with almonds, peanut butter and banana before serving.
