Ingredients

  • cups Biscoff cookies crushed (about 14 cookies)
  • 4 tablespoons unsalted butter melted
  • 16 ounces cream cheese softened
  • cup sugar
  • 1 teaspoon vanilla
  • 18 ounces container cool whip

Instructions

  • Preheat the oven to 350 degrees.
  • Crush the biscoff cookies into fine crumbs using a food processor and mix with the melted butter.
  • Flatten the buttery crumbs into the bottom of the baking dish or pan with parchment paper.
  • Then, cook for 10 minutes, remove, and let it cool.
  • In a large bowl, mix softened cream cheese, granulated sugar, and vanilla until smooth.
  • Add in the cool whip and whip until well incorporated.
  • Pour the mixture on top of the cooled crumbs.
  • Garnish with more crushed cookies and let chill for 2-4 hours.
  • Slice the chilled cheesecake into bars with a knife. Then, serve and enjoy!
