Ingredients
2tablespoonsvegetable oil
¼cupsweet onionsthinly sliced
3clovesgarlicsliced
½cupvegan luncheon meatdiced
1cuppotatoescut into medium cubes
½cupchayotecut into medium cubes
½cupgreen beanschopped
½cupcarrotscut into medium cubes
1tablespoonvegetarian oyster mushroom sauce
2cupsvegetable broth or water
2tablespoonschunky peanut butter
¼cupall-purpose cream
¼teaspoonsalt
¼teaspoon ground black pepper
Instructions
Sauté the Base
In a hot skillet over low heat, add vegetable oil.
Sauté sliced garlic and onions for 2 minutes.
Add Vegan Meat and Veggies
Increase the heat to medium and add the diced vegan luncheon meat. Cook until browned on all sides.
Add potatoes, chayote, green beans, carrots, and oyster mushroom sauce. Sauté for another 2 minutes.
Simmer the Sauce
Add vegetable broth and chunky peanut butter. Bring to a boil, then reduce heat and simmer for 12 minutes on low.
Add Cream and Seasoning
Add all-purpose cream, salt, and pepper. Mix well and simmer for another 2 minutes.
Season with additional salt and ground black pepper to taste.
Serve
Transfer to a serving bowl and serve immediately with steamed rice.
