Ingredients

  • 10 oz medium okra
  • 3 tablespoons oyster mushroom sauce
  • 1 teaspoon brown sugar
  • 1 teaspoon dark soy sauce
  • ¼ teaspoon sesame oil
  • ¼ cup vegetable broth
  • 1 lemon juiced
  • 1 ½ tablespoons vegetable oil
  • 5 cloves garlic minced
  • 1 ginger sliced thinly

Instructions

Blanch the Okra:

  • Bring a pot of water to a boil over medium heat.
  • Add the okra and blanch for 4 minutes. Remove and transfer to a bowl.

Make the Sauce:

  • In a small bowl, mix together oyster mushroom sauce, brown sugar, dark soy sauce, sesame oil, vegetable broth, and lemon juice. Set aside.

Sauté and Simmer:

  • In a small pan over low heat, add vegetable oil and sauté minced garlic until light brown.
  • Add ginger slices and cook for another 2 minutes.
  • Pour in the prepared sauce mixture and bring to a boil.
  • Reduce heat and let it simmer for 3 minutes.

Finish the Dish:

  • Add the blanched okra into the sauce and simmer for another 2 minutes.
  • Serve warm with steamed rice and enjoy!
