Ingredients
Drink Base:
2(12 fl oz) cansSparkling water
¼cupPassionfruit syrup
Mint leavesfor garnish
Ice cubesfor serving
Tamarind-Ginger Tea Base:
4ozTamarind podswashed and peeled
2thumb-sized pieces of gingerwashed and sliced
5cupswater
Simple Syrup:
1cupGranulated white sugar
1cupWater
Instructions
Make the Tamarind-Ginger Tea Base:
In a pot, combine the tamarind pods, sliced ginger, and 5 cups water.
Bring to a boil and let it simmer for 5 minutes.
Turn off the heat and let it steep for 30 minutes, until the liquid cools completely.
Once cooled, strain and remove the tamarind and ginger pieces. Set the tea base aside.
Make the Simple Syrup:
In a separate pot, combine the granulated white sugar and water.
Bring to a boil, stirring until the sugar fully dissolves.
Turn off the heat and let the syrup cool completely.
Assemble the Drink:
In a pitcher or large mixing bowl, combine the simple syrup, tamarind-ginger tea base and passionfruit syrup. Then, mix well.
Fill glasses with ice cubes, then pour in the tamarind mixture to about ¾ full.
