Vegan Pancit Canton

Here's a quick and easy vegan stir-fried noodle recipe that is made with dried pancit canton, vegetables, savory sauce, and vegan meat which makes a healthy and delicious meal for the whole family!

Ingredients

  • 2 tablespoons olive oil
  • 1 cup sliced vegan meat
  • 2 cloves garlic sliced
  • ¼ cup red onion sliced
  • 1 cup green beans sliced
  • ½ cup snow peas ends trimmed
  • 1 cup shredded cabbage
  • ½ cup carrots thinly sliced
  • ½ cup red bell pepper thinly sliced
  • 3 tablespoons oyster mushroom sauce
  • 3 tablespoons low-sodium soy sauce
  • 1 cup vegetable broth
  • ¼ teaspoon red chili flakes
  • 4 oz dried pancit canton prepared in accordance with package instructions
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons lemon juice

Instructions

  • Add oil to a heated skillet over medium high heat and saute sliced vegan meat for 2 minutes or until crisp.
  • Add garlic, red onions and saute for a minute.
  • Next add green beans, snow peas, shredded cabbages, carrots, red bell pepper and continue cooking for another 2 minutes.
  • Pour the oyster mushroom sauce, vegetable broth, soy sauce, sprinkle red chili flakes and bring the mixture to a boil
  • Then mix in the pancit canton and allow it to cook until the pancit canton is tender and cooked through.
  • Season with salt and ground black pepper, then transfer to a serving bowl and drizzle with lemon juice and serve immediately.
