Ingredients
3tablespoonsvegetable oil
½cupsweet onionsfinely chopped
½cupfinely chopped veggie meat
2tablespoonsoyster mushroom sauce
1tablespoonsoy sauce
½teaspoonsesame seeds
½cupcanned sweet corn kernels
¼cupfinely diced carrots
1½cupcooked day-old rice
1tablespooncrispy garlic
3large eggsbeaten
1tablespoonwhole milk
¼teaspoon salt
¼teaspoonground black pepper
Instructions
Place half of the vegetable oil in a heated skillet over medium heat. Sauté sweet onions and veggie meat for 2 minutes while stirring constantly.
Drizzle with oyster sauce, soy sauce, and sesame seeds. Add sweet corn kernels and diced carrots; mix well until well combined.
Add day-old rice and crispy garlic. Cook and sauté for 3 minutes.
Transfer to a round bowl and press down to form. Place the rice on a serving plate.
Combine the beaten eggs and milk in a bowl; set aside. In the same pan, add the remaining oil.
Pour the egg mixture and cook for a minute on medium-high while stirring constantly. Season with salt and ground black pepper.
Continue cooking and tilt the pan to place the omelet on the side. Cook for another 3 minutes while slowly folding it.
Once done, place the omelet on top of the rice. Serve immediately.
Notes
It is easy to use a nonstick skillet when frying the egg and the rice. This will prevent burning the egg and having crispy-burnt rice.
