Ingredients
¾cupunsalted buttersoftened
½cupbrown sugar
½cupwhite sugar
1large egg
1tablespoonvanilla extract
2cupsall-purpose flour
2teaspoonscornstarch
1teaspoonbaking soda
⅛teaspoonsalt
1cupdried cranberries
1cupwhite chocolate chips
Instructions
Prepare the Wet Ingredients
In a large mixing bowl, add the softened butter, brown sugar, and white sugar.
Beat with a handheld mixer until light and fluffy.
Add the egg and vanilla extract.
Then mix everything until well combined.
Prepare the Dry Ingredients
In a separate bowl, add the flour, cornstarch, baking soda, and salt.
Mix well until evenly combined.
Make and Chill the Dough
Add the dry ingredients to the wet ingredients.
Mix just until combined. Don't overmix.
Add the dried cranberries and white chocolate chips.
Mix until evenly incorporated into the dough.
Cover the cookie dough, then refrigerate for at least 1 hour.
Bake the Cookies
Preheat the oven to 350°F.
Scoop some chilled cookie dough onto cookie sheets. Make sure to leave some space between each cookie.
Bake the mini cookies for 8-10 minutes.
Don't overbake if you want the cookies soft and chewy.
Cool and Serve
After baking, let the cookies cool on a wire rack for a few minutes.
