Ingredients

  • 1 cup pancake mix
  • 1 large egg beaten
  • cup buttermilk
  • ¼ red bell pepper deseeded and finely chopped
  • 1 ½ cups canned corn kernels drained
  • 1 tablespoon finely chopped spring onions
  • 2 tablespoons olive oil

Dipping Sauce (optional):

  • aioli
  • ranch
  • ketchup
  • cheese sauce
  • maple syrup

Instructions

Make the Batter:

  • In a medium bowl, combine pancake mix, beaten egg, buttermilk, red bell pepper, corn kernels, and spring onions.
  • Mix well until the batter is smooth and everything is evenly distributed.

Cook the Fritters:

  • Heat a nonstick pan over medium heat and brush with olive oil.
  • Scoop 2 tablespoons of batter and pour into the pan. Cook until bubbles appear on the surface, just like pancakes.
  • Flip and cook for another 2 minutes with the lid on, until golden brown and cooked through.
  • Repeat with the remaining batter, adding more oil to the pan as needed.

Serve:

  • Serve warm with your choice of dipping sauce.

Notes

• If you want a kid-friendly taste, you may omit the spring onions and serve it with a cheese sauce.
• If the batter is too thick, add a splash of milk to lighten it a little bit. You want the batter to be a little bit runny.
