Ingredients
1cuppancake mix
1large eggbeaten
⅓cupbuttermilk
¼red bell pepperdeseeded and finely chopped
1 ½cupscanned corn kernelsdrained
1tablespoonfinely chopped spring onions
2tablespoonsolive oil
Dipping Sauce (optional):
aioli
ranch
ketchup
cheese sauce
maple syrup
Instructions
Make the Batter:
In a medium bowl, combine pancake mix, beaten egg, buttermilk, red bell pepper, corn kernels, and spring onions.
Mix well until the batter is smooth and everything is evenly distributed.
Cook the Fritters:
Heat a nonstick pan over medium heat and brush with olive oil.
Scoop 2 tablespoons of batter and pour into the pan. Cook until bubbles appear on the surface, just like pancakes.
Flip and cook for another 2 minutes with the lid on, until golden brown and cooked through.
Repeat with the remaining batter, adding more oil to the pan as needed.
Serve:
Serve warm with your choice of dipping sauce.
Notes
• If you want a kid-friendly taste, you may omit the spring onions and serve it with a cheese sauce.• If the batter is too thick, add a splash of milk to lighten it a little bit. You want the batter to be a little bit runny.
