    This recipe is quick, beginner-friendly, and uses simple pantry ingredients. It’s vegetarian and can be made dairy-free by swapping the buttermilk.

    • Buttermilk

    • Ranch
    • Ketchup
    • Cheese sauce
    • Maple syrup

    Instructions

    Make the Batter:

    1. In a medium bowl, combine pancake mix, beaten egg, buttermilk, red bell pepper, corn kernels, and spring onions.

    2. Mix well until the batter is smooth and everything is evenly distributed.

    Cook the Fritters:

    3. Heat a nonstick pan over medium heat and brush with olive oil.

    4. Scoop 2 tablespoons of batter and pour into the pan. Cook until bubbles appear on the surface, just like pancakes.

    5. Flip and cook for another 2 minutes with the lid on, until golden brown and cooked through.

    6. Repeat with the remaining batter, adding more oil to the pan as needed.
