Ingredients
1cupall purpose flour
½teaspoonbaking soda
¼teaspooncoarse salt
3largeeggs
1cupbrown sugar
¾cupsvegetable oil
2teaspoonsvanilla extract
½cupcocoa powder
½cupbrewed coffee(or orange juice, black tea)
¾cupsmini dark chocolateor chopped if large
Instructions
Prep the Pan:
Preheat oven to 325°F (165°C). Grease a 9 x 5-inch loaf pan and line it with parchment paper for easy removal.
Mix the Dry Ingredients:
In a small bowl, whisk together flour, baking soda, and salt. Set aside.
Make the Batter:
In a large mixing bowl, whisk eggs and brown sugar until smooth and syrupy.
Whisk in vegetable oil and vanilla extract.
Add cocoa powder and whisk until no lumps remain.
Gradually whisk in brewed coffee (or juice/tea) until fully incorporated.
Stir in the dry flour mixture until smooth.
Fold in chocolate chips.
Bake the Cake:
Pour batter into the prepared loaf pan and smooth the top.
Bake for 55–65 minutes or until a toothpick inserted comes out with a few moist crumbs.
Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
