Ingredients

  • 1 cup all purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon coarse salt
  • 3 large eggs
  • 1 cup brown sugar
  • ¾ cups vegetable oil
  • 2 teaspoons vanilla extract
  • ½ cup cocoa powder
  • ½ cup brewed coffee (or orange juice, black tea)
  • ¾ cups mini dark chocolate or chopped if large

Instructions

Prep the Pan:

  • Preheat oven to 325°F (165°C). Grease a 9 x 5-inch loaf pan and line it with parchment paper for easy removal.

Mix the Dry Ingredients:

  • In a small bowl, whisk together flour, baking soda, and salt. Set aside.

Make the Batter:

  • In a large mixing bowl, whisk eggs and brown sugar until smooth and syrupy.
  • Whisk in vegetable oil and vanilla extract.
  • Add cocoa powder and whisk until no lumps remain.
  • Gradually whisk in brewed coffee (or juice/tea) until fully incorporated.
  • Stir in the dry flour mixture until smooth.
  • Fold in chocolate chips.

Bake the Cake:

  • Pour batter into the prepared loaf pan and smooth the top.
  • Bake for 55–65 minutes or until a toothpick inserted comes out with a few moist crumbs.
  • Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Can be stored tightly wrapped in the fridge for up to 3 days.
