Ingredients

  • 2 ripe mangos peeled and diced
  • 1 cup heavy whipping cream or all purpose cream
  • ½ cup condensed milk
  • 1 teaspoon vanilla optional

Instructions

  • Peel and dice the mangoes into small cubes. Set aside.
  • In a large bowl, beat the cream using a hand mixer or stand mixer until light and fluffy with soft peaks.
  • Fold in the condensed milk and vanilla extract, if using, until combined.
  • Gently fold in the diced mangoes, reserving a few pieces for topping if desired.
  • Transfer the mixture to a freezer-safe container and smooth the top. Cover and freeze for at least 8 hours or overnight.
  • Scoop and serve frozen. Top with extra mango before serving, if desired.

Notes

Tip: To help prevent ice crystals from forming, stir the ice cream every 2 hours during the first 4 hours of freezing. This helps keep the texture smooth and creamy.
