Fresh Cucumber Avocado Salsa

Ingredients

  • 2 avocados
  • 1 pound cherry tomatoes
  • 1 English cucumber
  • ½ red onion
  • 1 lemon juiced
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  • Wash all produce thoroughly.
  • Dice the cucumber by cutting it into quarters lengthwise, then slicing into small pieces. Transfer to a bowl.
  • Slice cherry tomatoes in half and add them to the bowl.
  • Peel and dice the avocados, then gently mix them in.
  • Thinly slice the red onion and add to the bowl.
  • Juice the lemon and drizzle over the mixture.
  • Add olive oil, salt, and black pepper to taste.
  • Mix gently until all ingredients are well combined.
  • Serve chilled as a dip, topping, or side dish.
