Preheat the oven to 350°F (175°C) and lightly spray a baking pan with nonstick spray.
In a large bowl, combine apple slices, allspice, nutmeg, cinnamon, and vanilla extract. Stir well to coat the apples evenly.
Roll out your pie crusts and use a small round cutter or pie mold to cut circles for the base and top of each pie pop.
Assemble the pops:
Place one pie crust circle on a baking sheet.
Spoon a small amount of apple filling into the center.
Press a lollipop stick into the filling.
Cover with another pie crust circle and press the edges to seal.
Brush with egg yolk for a golden crust.
Bake for 15-20 minutes, or until golden brown.
