Apple pie in any form is delicious, don't you agree? Instead of making the usual apple pie, I thought making mini apple pies would be a better idea. Sealed in flaky pastry and baked on a stick, each of my Mini Apple Pie Pops is a sweet, snackable treat just for you!

What are Mini Apple Pie Pops?
Mini Apple Pie Pops are bite-sized apple pies on a stick, an American-inspired treat rather than a Filipino recipe. They became popular as a fun, portable dessert choice on social media, and a unique feature is the use of apple pie spice - a fragrant blend of cinnamon, nutmeg, and other warm spices that captures the classic comfort of a full-size apple pie.
When is this Dish Typically Enjoyed?
Mini Apple Pie Pops can be enjoyed anytime, but they’re especially popular during the fall and around Thanksgiving when apples are in season and warm, spiced desserts are in high demand. Thanks to their cute presentation and easy-to-serve format, they also appear at events like birthday parties, baby showers, and holiday celebrations throughout the year.
Substitutions
- Ground Allspice — A pinch of clove or a bit of pumpkin pie spice can replicate its warm flavor.
- Nutmeg — Mace or extra cinnamon can stand in, though the taste will differ slightly.
- Granny Smith Apples — Tart varieties like Honeycrisp, Pink Lady, or Braeburn apples provide a similar tang.
- Egg Yolk — Replace with a tablespoon of milk or cream for sealing crust edges, or use a bit of melted butter if just for browning.
- Pie Crusts — Puff pastry gives a flaky result, and cookie dough or phyllo sheets offer unique textures for a creative spin.

Recipe Variations
- Streusel Topping - Sprinkle each pie pop with a simple butter-sugar-flour crumble before baking to create a crisp, bakery-style crust
- Cheddar Twist - Mix shredded sharp cheddar cheese into the crust or filling to embrace the classic apple-and-cheese pairing
- Mixed Fruit Filling - Combine apples with pears, peaches, or berries for a colorful medley that adds different textures and flavors
- Glazed Apple Pops - Lightly brush each baked pop with a simple powdered sugar–milk glaze to add sweetness and a polished sheen
Storage
- Store pie pops in an airtight container at room temperature for up to two days, ensuring they remain crisp and protected from humidity.
- Extend freshness by refrigerating in a sealed container for up to four days; warm them briefly in the oven or microwave before serving.
- Arrange cooled pie pops in a single layer on a tray, freeze until solid, and then transfer to a freezer-safe bag or container for up to three months.
- To revive crispness, bake frozen or chilled pops at 350°F (175°C) for 5–7 minutes, or until heated through.
Ingredients
Listed below are all the ingredients you will need (omitting quantities):
- All-purpose flour
- Ground allspice
- Nutmeg
- Cinnamon
- Vanilla extract
- Granny Smith apples
- Egg yolk
- Pie crusts (my own recipe here)

Instructions
Preheat the oven to 350°F (175°C) and lightly spray a baking pan with nonstick spray.
Peel the apples carefully, as if shaving them, then dice into small pieces.

In a bowl, mix apple slices with all-purpose flour.

Stir in the blended allspice, nutmeg, and cinnamon.

Pour in the vanilla extract and combine well.

Stir the apple mixture well to coat evenly.

Roll out the pie crusts and use small round cookie cutters to cut circles for the top and bottom of each pie pop.

Place each pie dough on the baking sheet. No need for parchment paper, of course.

Spoon a small amount (maybe a tbsp) of apple filling into the center of each pie crust circle.

Press a lollipop stick into the filling. Cover with another pie crust circle and press the edges to seal.

Brush the tops with egg yolk, then bake for 15-20 minutes or until golden brown.

Let them cool slightly before serving and drizzle with your favorite syrup - mine's chocolate of course! Then go ahead and enjoy your sweet, crispy apple pie pops!

Hint: If using homemade pie crust, chill it for 30 minutes before rolling to prevent shrinking.
⭐ Top Tip
For extra flavor and shine, brush the top with a mix of honey and water after baking. Add caramel drizzle or a dusting of powdered sugar for an extra treat!
