1pie crust
⅓cuplight corn syrup
¼cupbrown sugar
1½tablespoonsunsalted buttermelted
1egglightly beaten
½teaspoonvanilla extract
½cupchopped pecans
Instructions
Preheat the oven to 350 degrees.
Gently roll out the pie crust on a floured surface. With a 3-inch cookie cutter or glass, cut out 12 circles from the pie crust.
Generously coat a 12-count muffin pan with nonstick cooking spray and carefully place each piece of pie crust in each muffin cavity (each piece should come up the sides about halfway in each muffin cavity).
Combine the corn syrup, brown sugar, melted butter, egg, and vanilla extract until combined, then add the chopped pecans.
Fill each pie crust with about 1 tablespoon of filling (the filling should not rise above the edges of the crust).
Bake for 25 minutes, or until the filling begins to solidify.
Cool completely in the pan for 10 minutes before removing.
