Ingredients

  • 2 ½ cups white vinegar
  • 2 ½ cups granulated white sugar
  • 2 large unripe green mangoes deseeded & sliced
  • 1 tablespoon chopped red chilies
  • ¼ cup red onions sliced

Instructions

  • Place white vinegar and granulated white sugar in a pot.
  • Mix well and bring to a simmer for 3 minutes until the sugar has been dissolved.
  • Remove from the heat to cool it down fully.
  • Place the remaining ingredients in a large jar with a lid.
  • Pour the pickling liquid into the jar.
  • Close the lid and let it pickle for at least 7-9 days in the fridge before serving.

Notes

1) You can add different spices and herbs to the pickling mixture as it is up to you.
2) Make sure the sugar is fully dissolved before turning the heat off.
