Ingredients
Listed below are all the ingredients you will need:

Instructions

Place white vinegar and granulated white sugar in a pot or saucepan to create the brine solution. Mix well and bring to a simmering boil for 3 minutes until the sugar has been dissolved. Then, remove it from the heat to cool it down fully.
Place the peeled and sliced large green mangoes and the remaining ingredients in a large mason jar with a lid.

Pour the pickling liquid into the jar.
Close the lid and let it pickle for at least 7-9 days in the fridge before serving.

Hint: Make sure the mango slices are completely soaked in the pickling liquid for flavor absorption and even pickling.
