Instructions
Prepare the Oven
First, preheat the oven to 350°F. Line a baking sheet with parchment paper, foil, or a baking mat.

Next, pour in the alternative milk. Mix with a fork until everything is well combined.
Make the Cookie Dough
Then, add the flour and baking soda. Mix with a fork, then switch to a wooden spoon as the dough gets thicker.
Scoop the Cookies
Next, use a cookie scoop to place the dough onto the prepared baking sheet. Leave some space between each cookie.
Make the Criss-Cross Pattern
Then, gently flatten each cookie with a fork. Press in opposite directions to make the classic criss-cross pattern.
Bake the Cookies
Bake at 350°F for 9 to 11 minutes. Remove the baking sheet from the oven when the cookies are done.
Cool the Cookies
Let the cookies rest on the hot baking sheet for about 2 minutes. Lastly, transfer them to a cooling rack and let them cool completely.
Notes
I used almond milk in this recipe, but feel free to use soy milk or whatever you have available.
If you want to change up the recipe, try adding chocolate chips, vanilla extract, banana, cinnamon or coconut shreds.
