Ingredients

Base Ingredients:

  • 1 cup all-purpose cream or heavy whipping cream
  • ½ cup ube boiled, peeled, and cut into wedges
  • ¼ cup condensed milk
  • ¼ cup coconut milk

Flavoring:

  • 1-2 tablespoons ube flavoring

Instructions

Prepare the Ube:

  • In a pot over medium heat, bring water to a boil. Add the sliced ube and boil for about 35 minutes or until tender. Drain and let cool.

Whip the Cream:

  • In a bowl or food processor, add the all-purpose cream. Beat until foamy, about 2-3 minutes.
  • If using heavy whipping cream, beat until stiff peaks form.

Combine Ingredients:

  • Add the boiled ube, condensed milk, 1 tablespoon of ube flavoring, and coconut milk to the whipped cream.
  • Mix until well combined. If a stronger ube flavor is desired, add an additional tablespoon of ube flavoring.

Freeze:

  • Transfer the mixture into a container. Cover with a lid, parchment paper, or plastic wrap to prevent ice crystals from forming.
  • Freeze overnight (6-8 hours)

Serve:

  • Best served frozen. Scoop and enjoy!
