Ingredients
2cupscooked tapioca pearls
4cupswater
¼cuppacked brown sugar
2packsunflavored gulaman powder
2cupsall-purpose cream
1cupcondensed milk
½cupcheddar cheesegradar
½cupnata de coco
Instructions
Cook the tapioca pearls according to the directions.
Combine water, brown sugar, gulaman powder, and a tablespoon of ube flavoring in a pot. Stir well until the sugar has dissolved.
Bring the mixture to a boil while stirring constantly.
Turn off the heat and transfer to a heat-proof rectangular container. Let it set and cool completely.
Once the jelly has been set and firm, slice it into medium-sized squares.
In a large container or mixing bowl, combine all the ingredients and mix well.
Let it cool in the fridge before serving.
Notes
In order for the jelly to cool down fast, place the container in an ice bath. This will bring down the temperature and helps the jelly to set firm much quicker.
Instead of regular tapioca pearls, you may use boba pearls as an alternative. It will give the jelly salad another texture.
