Ube Jelly

A simple yet sweet, creamy delicacy made with a delectable combination of ube jelly, cheddar cheese, tapioca pearls, and sweetened milk for a delightful treat!

Ingredients

  • 2 cups cooked tapioca pearls
  • 4 cups water
  • ¼ cup packed brown sugar
  • 2 packs unflavored gulaman powder
  • 2 cups all-purpose cream
  • 1 cup condensed milk
  • ½ cup cheddar cheese gradar
  • ½ cup nata de coco

Instructions

  • Cook the tapioca pearls according to the directions.
  • Combine water, brown sugar, gulaman powder, and a tablespoon of ube flavoring in a pot. Stir well until the sugar has dissolved.
  • Bring the mixture to a boil while stirring constantly.
  • Turn off the heat and transfer to a heat-proof rectangular container. Let it set and cool completely.
  • Once the jelly has been set and firm, slice it into medium-sized squares.
  • In a large container or mixing bowl, combine all the ingredients and mix well.
  • Let it cool in the fridge before serving.

Notes

  • In order for the jelly to cool down fast, place the container in an ice bath. This will bring down the temperature and helps the jelly to set firm much quicker.
  • Instead of regular tapioca pearls, you may use boba pearls as an alternative. It will give the jelly  salad another texture.
