Vietnamese Coffee Popsicles

Here's a delicious frozen treat with a perfect balance of brewed coffee and sweetened milk in a popsicle! This easy popsicle recipe is a great dessert or snack for summer or during hot days!

Ingredients

Layer 1

  • 1 cup cold brew coffee sweeten to like your liking

Layer 2

  • ¼ cup sweetened condensed milk
  • cup regular milk

Layer 3

  • 1 cup Cool Whip *

Instructions

Mix the Coffee Base

  • In a bowl or pitcher, combine Layer 1 (cold brew coffee) and Layer 2 (sweetened condensed milk and milk). Mix well until fully incorporated. Set aside.

Add the Cream Layer

  • Add 1–2 tablespoons of Layer 3 (Cool Whip or ice cream) into each popsicle mold.
  • Freeze the molds for 1 hour to let the creamy layer set.

Add Coffee Layer and Freeze

  • After 1 hour, pour the mixed coffee and milk mixture (Layers 1 & 2) into each mold, filling about ¾ full.
  • Insert popsicle sticks.
  • Freeze for an additional 4–5 hours, or best overnight, until fully set.

Unmold and Serve

  • When ready to eat, run the popsicle molds under warm water for 20 seconds to loosen.
  • Gently remove and enjoy!

Notes

*Mix layers 1 and 2 until well combined. allow the ice cream or cool whip slightly melt prior to scooping it into the molds
