In a large pot over high heat, bring water to boil then add diced potatoes, about 20 minutes. When tender, remove from heat, drain, then transfer to a large bowl. Add garlic, butter, turmeric, parsley, salt and pepper to taste, then mash potatoes while hot, set aside:
