    What are White Bean Meatballs?

    White Bean Meatballs are delicious and flavorful plant-based balls made with white beans, carrots, spices, and seasonings.     Ingredients

    Listed below are all the ingredients you will need:

    • potatoes
    • garlic cloves
    • butter
    • turmeric
    • dried parsley
    • salt and pepper
    • white beans
    • oats
    • carrots
    • dried basil
    • oregano
    • olive oil
    • cayenne pepper
    • salt
    • black pepper
    • cornstarch
    • warm water
    • onion
    • vegetable broth
    • peas
    • dried thyme

    Instructions

    Mashed potato:

    In a large pot over high heat, bring water to a boil, then add diced potatoes and cook for about 20 minutes. When tender, remove from the heat, drain, then transfer to a large bowl. 

    Add garlic, butter, turmeric, parsley, salt, and pepper to taste, then mash potatoes while hot; set aside.

    Prepare vegeballs: 

    In a large mixing bowl, add white beans and mash with a fork. 

    Add oats, onion, carrots, dried thyme, dried basil, dried oregano, and cayenne pepper, and mix until it forms into a dough.

    Heat oil in a large non-stick pan over medium-high heat, then roll the dough into balls and fry each side until golden brown.

    Gravy:

    In a small bowl, mix cornstarch with warm water; set aside. Heat a pan over low to medium heat with butter. 

    When melted, add onion and garlic and cook until tender. Pour vegetable broth and peas, add herbs, and bring to a simmer; then pour the cornstarch mixture and cook until thickened.

    Prepare your dish with mashed potatoes, followed by veggie balls and gravy on top. Best served immediately. 

    Substitutions and Variations

    • Feel free to switch up and/or add ingredients to your liking.
    • You can use whatever beans or chickpeas you have on hand for the white bean meatballs.
    • You may add flaxseed egg for a better binding.
    • You can mix the ingredients in a food processor or blender to save time.
    • You may deep-fry or bake these white bean meatballs in an oven according to your preference.

    Storage Tips

    • Place the leftover white bean meatballs in an airtight container and store in the refrigerator for up to 4 days.
    • You may also freeze them in heavy-duty freezer bags, or wrap tightly with heavy-duty aluminum foil or freezer wrap to further extend the shelf life.

    Ingredients

    Mashed Potatoes

    • 1 kilogram potatoes washed peeled and diced
    • 2 cloves garlic minced
    • 1 tablespoon butter
    • ½ teaspoon turmeric
    • 2 tablespoons dried parsley
    • salt and peper to taste

    Veggie Balls

    • 1 ½ cups white beans boiled
    • 2 cups oats
    • ¼ cup onion chopped
    • 1 cup carrots shredded
    • ½ teaspoon dried thyme
    • ½ teaspoon dried basil
    • ½ teaspoon oregano
    • 3 tablespoons olive oil
    • pinch cayenne pepper
    • ½ teaspoon salt
    • ½ teaspoon black pepper

    Gravy

    • 1 teaspoon cornstarch
    • 2 teaspoons warm water
    • 2 tablespoons butter
    • 1 small onions sliced
    • 2 cloves garlic
    • 1 cup vegetable broth
    • ½ cup peas
    • 1 tablespoon dried parsley
    • 1 tablespoon dried thyme
