    Ingredients

    Listed below are all the ingredients you will need:

    • Vegan luncheon meat
    • Olive oil
    • Red onions
    • Garlic cloves
    • Red bell pepper
    • Snow peas
    • Bean sprouts (togue)
    • Vegetarian oyster mushroom sauce
    • Chili flakes
    • Lemon juice
    • Salt
    • Ground black pepper

    Instructions

    Cook the Luncheon Meat

    1. In a pan over medium heat, fry the vegan luncheon meat until browned.

    2. Remove from the skillet and transfer to a bowl.

    Sauté the Aromatics

    3. In the same pan with the remaining oil, sauté red onions and garlic for 30 seconds.

    Add Vegetables and Season

    4. Toss in the fried luncheon meat, red bell peppers, snow peas, and bean sprouts. Cook for 2 minutes while stirring.

    5. Add vegetarian oyster mushroom sauce and chili flakes.

    Finish and serve.

    7. Add the lemon juice and mix well.

    8. Serve immediately. Best served with steamed rice or as a vegetable side dish.

    Substitutions & Variations

    • Ingredient Swap
      Use sliced mushrooms or firm tofu instead of vegan luncheon meat.
    • Variation
      If oyster sauce is not available, try soy sauce with a small pinch of sugar. Adjust chili flakes depending on your preferred spice level.
    • Mistake to Avoid
      Don't overcook the bean sprouts! They shouldn't be watery or soft. They should stay slightly crispy.

    This dish keeps well in the fridge for 2–3 days when stored in an airtight container. But bean sprouts don't freeze well. They lose their crisp texture and become watery.

    Can I use regular oyster sauce instead of vegetarian oyster sauce?

    Yes, you can. But it will no longer be vegan. Vegetarian mushroom sauce keeps the dish plant-based.

    Yes, a little! The chili flakes add mild heat. Just adjust or remove them to suit your taste.

    Do I need to cook bean sprouts for a long time?

    No, please don't! Bean sprouts cook very fast and get soggy. So stir-fry them briefly on high heat.

    • ½ cup vegan luncheon meat diced
