    • oats – use whole wheat flour, whole wheat pastry flour, or gluten-free flour
    • dairy-free milk – try oat milk, coconut milk, almond milk, or soy milk
    • baking powder – sub with ¼ tsp baking soda + ½ tsp lemon juice or white vinegar
    • agave syrup – use maple syrup, honey (if not vegan), or date syrup
    • peanut butter – sub with almond butter, tahini, or sunflower seed butter
    • bananas – swap with applesauce or mashed sweet potatoes

    Instructions

    Blend oats in a dry blender or coffee grinder to make oat flour:

    Add all the remaining ingredients to the oat flour. Whisk or blend until a smooth consistency. Depending on the oats, you can need more milk:

    If you find it a bit liquid, don't add milk. It will get thick while you pre-heat a pan or pancake machine:

    Preheat the pancake machine over medium-high heat. Lightly grease with oil or melted butter. Pour ¼ cup or 3 tablespoons of batter to make 1 pancake. If you don't have a pancake machine, you can use a nonstick pan with a bit of coconut oil:

    Once you see "bubbles' around your pancake, you can flip it and cook the other side, like so:

    • If you want a bit more texture in your pancakes, you can use chunky peanut butter.
    • Using rolled oats in this recipe has a higher fiber content.
    • Use very ripe bananas. Choose those that already have dark spots on the banana skin.
    • Add flax seeds to the batter for a fuller load of fiber and nutrients.
