    Variations

    • This recipe is very adaptable, you can add bananas, cinnamon, nutmeg, or vanilla extract to the pancake batter.
    • If you want a sweeter pancake, add brown sugar or even coffee creamer to sweeten the pancakes.

    Substitutions

    • Use buttermilk pancake mix for more of a fluffy pancake.

    Storage

    • Freeze leftover pancakes for up to 6 months in an airtight container.

    Pro Tip

    • Browned butter will enhance the flavor of the pancakes. Simply melt over the stove in a saucepan for about 3-5 minutes or until the butter turns golden brown.

    Frequently Asked Questions

What causes pancakes to be fluffy?

Bubbles of gas are caught in the batter as it cooks and this is what makes the pancake fluffy.

Which is better, salted or unsalted butter for pancakes?

Unsalted butter is better for cooking pancakes because it allows you to control the amount of salt.

Is this similar to the Classic Faire pecan pancake mix no longer sold in stores but online? I like your recipe but did not see the maple glaze recipe. Thank you!

        Hi Janet,
It looks like it's similar, but I've never tried the pancake mix. Also, thanks for the heads up! I actually used honey in this recipe so I updated the recipe card above. The maple glaze and other sweetener of your choice can be an alternative to it.

The recipe mentions honey doesn't tell how much and in the instructions doesn't mention adding honey. Is honey in this recipe?

I have tried this recipe twice now and found the mixture to be extremely dry. I have even tried it with two different pancake mixes to see if that was the problem and it wasn't. Both times I have had to add water to even be able to get it all mixed together. The mixture was so thick that it still had dry mix in it. Even after adding water, the pancakes were super dry while eating them and having added butter and syrup on top. If they had not been so dry, the taste would have been better. Is there something missing from the recipe above?

Hello Tammy. I'm sorry for the late response and I'm so sorry the recipe isn't working for you. The pancake batter will be very dry, almost like cookie dough. Please watch my video on it:

Please let me know how it goes and thank you for trying this recipe!
