    What is Ube Beignets Recipe?

    This Ube Beignets recipe is one of the easy pastry recipes that you can make. They are made with deep-fried beignets dough filled with ube halaya (purple yam jam) and sprinkled with confectioner's sugar which makes a sweet treat for loved ones.

    This will soon become a family favorite for breakfast, dessert, or afternoon snacks.

    Substitutions

    • Whole milk – almond milk or oat milk for dairy-free option
    • Vanilla extract – use ube extract for a double ube flavor
    • Butter – vegan butter or coconut oil
    • Vegetable oil – canola oil or avocado oil for frying
    • Ube halaya – use ube jam or mashed sweet potato with a bit of ube extract

    Ingredients

    Listed below are all the ingredients you will need:

    • all-purpose flour 
    • salt
    • warm water 
    • granulated white sugar
    • active dry yeast 
    • whole milk
    • vanilla extract 
    • egg 
    • softened butter
    • vegetable oil 
    • ube halaya
    • confectioner’s sugar

    Instructions

    Prepare all the ingredients and materials needed for this recipe. Then, let's begin!

    Whisk together flour and salt; set aside. In another large bowl, add warm water, half of the sugar, active dry yeast, and allow it to bloom for 15 minutes:

    Pour the warmed milk, remaining sugar, vanilla extract, and beaten egg into the bloomed yeast and mix well using a whisk, then add it into the flour mixture:

    Using a dough hook attachment, mix the dough for 6 minutes and slowly add the softened butter. Transfer the dough into an oiled bowl, then cover with cling film and allow the dough to rise for 2 hours:

    Once risen, place the dough on a floured surface and slowly roll/stretch the dough but not too thin. Cut the dough into several squares, then fry the dough beignets until golden at 350 degrees Fahrenheit:

    Transfer to a fried beignet into a rack lined with a paper towel. Once cooled down, poke a hole on one side and pipe the ube halaya until it is filled. Sprinkle with confectioner’s sugar:

    • 4 cups all-purpose flour
