    Berry Coconut Popsicles

    Try these delicious Berry Coconut popsicles! Full of berries, yogurt, and honey that will satisfy your cravings for a refreshing and creamy treat!

    Tips and Variations:

    • Feel free to mix the layers by blending all the ingredients together, then pour the mixture evenly into the popsicle molds.
    • If you don’t have blueberries or don’t have any available, feel free to substitute with the same amount of your favorite berry.
    • Replace the honey with maple syrup or agave.

    How to Make Berry Coconut Popsicles:

    Listed below are all the ingredients you will need:

    • ½ cup of yogurt, separated 
    • 3-4 large strawberries *
    • 1 handful of blueberries *
    • 1 tablespoon of coconut cream or milk *
    • ¼ cup of unsweetened coconut shavings *
    • ¾ cup of heavy cream
    • ¼ cup + 1 tablespoon of honey

    Berry Coconut Popsicles Ingredients

    In a blender, add a third of the yogurt, strawberries and blend until creamy and smooth.  Pour the strawberry yogurt mixture into a bowl and set aside.

    In the same blender, add half of the remaining yogurt, blueberries and blend until creamy and smooth.  Set aside. 

    In another small bowl, mix together the remaining yogurt, a tablespoon of coconut cream, and the unsweetened coconut shavings.

    In a large bowl, whip the heavy cream until it is smooth and slightly thick, then mix in the honey.

    Next, add ⅓ of the heavy cream to the strawberry yogurt mixture, ⅓ to the blueberry yogurt mixture, and ⅓ to the coconut yogurt mixture.  Carefully fold the heavy cream into each mixture until smooth.

    Evenly spoon equal amounts of blueberry, strawberry and coconut cream mixtures into the molds in layers according to your design.

    Push a popsicle stick into each of them about half-way down.

    Freeze for at least 4 hours or best overnight and best served cold
