    What is Mais Con Yelo?

Mais Con Yelo is a layered dessert made with sweet corn shredded ice, condensed milk, sweet milk, and Filipino ice cream!

The literal translation of Mais Con Yelo is Corn with Ice- sounds weird but surprisingly delicious especially paired with corn ice cream or even mango ice cream!

Also, there are many versions of this popular drink/dessert, and here's my version of it. Keep in mind you create this drink/dessert any way you like- as long as you have the key ingredients!

a spoonful of mais con yelo

    Top Tips

    • Use drained canned sweet corn without salt. Also, fresh-cooked or fresh corn off the cob works too, just chill in the refrigerator before using.
    • Ice: I prefer using shaved ice, but crushed ice works too! Here's my favorite ice machine that I've been using for years! Also, if you live in the Philippines, you can easily purchase shaved ice in the market.

    Substitutions

    • Sweet Corn Kernels
      • Thawed frozen sweet corn kernels
      • Cooked and cooled fresh sweet corn kernels
      • Regular canned corn without salt works.
    • Crushed Ice
      • Ice cubes or crushed ice from a blender
      • Shaved ice from a snow cone machine
      • Ice cubes crushed in a food processor
    • Condensed Milk
      • Sweetened condensed coconut milk (dairy-free)
      • Homemade condensed milk (made with milk and sugar)
    • Evaporated Milk
      • Full-fat coconut milk (dairy-free)
      • Half-and-half (whole milk and light cream)
      • Regular milk (whole or low-fat)
    • Vanilla Ice Cream (Optional):
      • Mango ice cream or Cheese Ice Cream (for Filipino flavor)
      • Coconut ice cream (tropical twist)
      • Dairy-free vanilla ice cream (vegan option)

    Variations

    • Fruit Explosion: Top with a medley of diced tropical fruits like mangoes, pineapples, and papayas for a burst of freshness.
    • Choco Overload: Drizzle chocolate syrup or add chocolate shavings on top of the corn and ice layers for a decadent chocolate twist.
    • Crunch: Sprinkle crushed peanuts, cashews, or even corn flakes (corn flake cereal) over the condensed milk for a delightful texture and flavor.
    • Beans: Add your favorite sweet bean for more texture.

    Storage

    • For the best experience, this dessert is most enjoyable when eaten immediately.

Using tall glasses or bowl, add about half a glass (or bowl) of shredded ice. Add 1-2 tablespoons of corn, mango, and coconut meat, and add a layer of shaved ice.

If desired add another layer of corn, shaved ice, mango, and coconut meat:

a glass and bowl of mais con yelo

Otherwise, drizzle, almond milk, and condensed milk and finish with a scoop of mango ice cream and to make it even more indulgent add a scoop of vanilla-flavored ice cream. If desired, drizzle additional condensed milk over ice cream and garnish with mint and enjoy as a snack:

    Frequently Asked Questions

Can I eat this without ice?

You can, but it will be very sweet. It's best to eat with shaved or crushed ice.

How can I make this vegan?

Use vegan ice cream and instead of using condensed milk, use agave syrup or even vegan condensed milk!
