    These delicious bite-sized Vegan Maple Bacon Pancakes is a delicious treat for breakfast! They are delicious maple pancakes topped with vegan bacon bits that you'll almost taste like the real thing!

    Top Tips

    • Allow the pancake batter sit for a minimum of 10 minutes to allow it to rise and achieve a fluffier texture.
    • Do not over mix. Having lumps are okay!

    Variations

    • Here is a similar donut maker we used and here is a similar hot dog maker we used. Or use a muffin maker.
    • Sprinkle donuts with fresh or frozen blueberries, bananas, or your favorite fruit.
    • Toppings: Customize toppings with vegan whipped cream, fruit compote, crushed nuts, or dairy-free chocolate chips for added flavor and texture.
    • Feel free to use premade vegan pancake mix.
    • Add a simple vanilla or chocolate glaze to give this recipe an extra boost of flavor.

    Substitutions

    • Bacon: There's so many different types of vegetarian bacons and Stripples (Veggie Bacon Strips (this contains eggs) is my favorite.
    • Maple Syrup: Substitute maple syrup with agave nectar, brown rice syrup, or date syrup for a vegan-friendly sweetener.
    • Flour: Substitute all-purpose flour with whole wheat flour, oat flour, almond flour, or a gluten-free flour blend for dietary preferences.
    • Baking Powder: Double check the baking powder used is labeled as vegan, as some brands may contain animal-derived ingredients.
    • Flavorings: Replace vanilla extract with almond extract or maple extract for different flavor profiles in the pancake batter.

    Storage

    • Room Temperature: Place cooled pancake bites in an airtight container or zip-top bag at room temperature for up to 2 days.
    • Refrigerator: For longer storage, refrigerate pancake bites in an airtight container for up to 5 days.
    • Freezer: To freeze, arrange cooled pancake bites in a single layer on a baking sheet and freeze until firm. Transfer to a freezer-safe bag or container and store for up to 3 months. Thaw overnight in the refrigerator or reheat in the microwave or oven before serving.
    • Layering: If stacking pancake bites, place parchment paper or wax paper between layers to prevent sticking.
    • Reheating: To reheat refrigerated or frozen pancake bites, microwave for a few seconds until warmed through or bake in a preheated oven at 350°F (175°C) for 5-10 minutes until heated.

    • salt
    • water
    • oil
    • vegan bacon

    Instructions

    Gather the ingredients for this Maple "Bacon" Pancake. Once the ingredients are all ready, let's begin!

    In a bowl stir together the dry ingredients, flour, sugar, baking powder, salt, and mix well:

    Using a whisk add the water and the oil, mixing until just combined. Lumps are okay:

    Add in the vegan chopped bacon bits and mix until just combined:

    Spray your appliance of choice with some cooking spray, and cook until the pancake is golden brown, then transfer to a cooling rack to cool completely.

    Can you make pancakes the night before and reheat them?

    Absolutely. The best way is to bake or even toast it.

    How to keep pancakes fresh overnight?

    For fresh pancakes the next day, simply let them cool down entirely before storing them in an airtight container in the fridge. They'll stay good for up to a week.

    Can you prep pancakes ahead of time?

    Absolutely, store the pancake batter overnight in plastic wrap in the fridge and cook when ready. Pancake batter is best cooked and eaten with in 24 hours.

It takes the flavors of Stripples a beloved vegetarian bacon my siblings and I enjoyed as kids. For our collaboration adventure, I prepared the pancake batter while she made the "bacon."
