No-Bake Biscoff Cookies are a quick and easy dessert made with rolled oats, cookie butter, brown sugar, maple syrup, and crushed Biscoff cookies. These sweet and chewy treats are dipped in melted white chocolate for an extra layer of indulgence without needing an oven.
With their rich caramelized flavor and creamy texture, these cookies are perfect for a snack, holiday treat, or even a last-minute dessert. They take just 20 minutes to prep and set in the freezer, making them a fuss-free option when craving something sweet.

Substitutions
- If you can't find Cookie Butter, use Biscoff Spread; it's the same thing. You may also use peanut butter, but it has a different taste.
- If you can’t find Biscoff cookies, you can use graham cracker crumbs or gingerbread cookies.
- You may use quick oats instead of rolled oats. But the texture will be slightly different. Quick oats will make the cookies softer, while rolled oats provide a chewier bite.

- Sweetness adjustment – Reduce the brown sugar slightly if you prefer a less sweet version.
- Enhance the flavor – Add ½ teaspoon vanilla extract or a pinch of ginger for a spiced touch.
- Make a Biscoff Cheesecake – Use these cookies as a base layer by pressing them into a pan, chilling, and topping with a mix of cream cheese, Biscoff cookie crumbs, and cocoa powder.

Listed below are all the ingredients you will need:
- brown sugar
- maple syrup
- cookie butter
- rolled oats
- white chocolate chips
- biscoff cookies

Instructions
In a large bowl, add brown sugar, maple syrup, and a spoonful of cookie butter and mix until well combined. Next, mix in rolled oats. The mixture should be thick but not too sticky.
Roll into balls (you may use cookie scoop here but rolling it is better) and flatten the bottom slightly with your hand.

In a ziplock bag crush biscoff cookies and sprinkle some on top of each ball, then place each cookie on a tray lined with parchment paper or a baking sheet and place in the freezer for 10 minutes.
While waiting, melt white chocolate in the microwave or a double boiler.
Remove the cookies from the freezer, dip the bottoms in the white chocolate, and place them back on the tray, then return the cookies to the freezer for 10 minutes to set.

Top Tips
- To prevent the cookies from sticking to your hands when rolling, lightly grease your hands with coconut oil or butter before rolling the dough.
- For best results, use a bar of white chocolate such as Ghirardelli or Bakers. However, to keep it vegan use white chocolate chips.
