    Instructions

    Make the Crust

    1. Crush Biscoff cookies into fine crumbs and mix with melted butter.

    2. Press the mixture firmly into the bottom of a 9-inch (23 cm) springform pan.

    3. Chill in the refrigerator while preparing the filling.

    Prepare the Filling

    4. In a mixing bowl, beat cream cheese and sugar until smooth.

    5. Add Biscoff spread and vanilla extract, then mix until fully combined.

    6. In a separate bowl, whip cold heavy cream to soft peaks.

    7. Gently fold the whipped cream into the cream cheese mixture.

    8. If using, fold in the melted chocolate chips for a chocolate twist.

    Assemble the Cheesecake

    9. Spread the filling over the crust in two layers.
