Whenever I heard the word meringue in a recipe, I stayed away because it scared me! I thought meringue recipes would be hard, complicated, messy, but as per usual, I was wrong. I made this recipe once and it was perfect. I gotta say, I was quite surprised by the texture of the cookie. It’s as if I am biting into air… Don’t believe me, give it a try!
How to Make Brownie Meringue Cookies:
In a medium-sized bowl, add the unsweetened cocoa powder, sifted powdered sugar, and salt:
Whisk it until well-combined:
In another bowl, add 2 egg whites and vanilla extract:
Whip it until soft peaks form, just like this:
Gradually add the powdered sugar mixture and fold it in the meringue mixture:
Add the chocolate chunks to the mixture and mix well:
Quick Tip: This cookie batter is sticky, so to prevent the batter from sticking to your fingers, dip your fingers in a bit of oil (any kind) before pressing it into your cookie batter.
Scoop the mixture on your cookie sheet, flatten cookies for them to bake evenly and bake for 15 minutes at 350F:
Serve.

I totally understand. Just follow the recipe and try to focus on recipes that have the word EASY, SIMPLE, because it will give you confidence when the end product is tasty.
Step 3 says to add chocolate chunks. But you don’t have them listed in your ingredient? What type of chunks, big or small? How many ounces? Thank you, they look delicious!

So… I made this recipe but I accidentally did 3 egg whites instead of two (because my eyesight isn’t great). Then to top it off, I only had 1 cup of powdered sugar. So I added an extra 1/4 cup of cocoa and a 1/4 cup of flour. I used milk chocolate chips as well. Still came out AMAZING! Great recipe! Also a great base recipe. I might try adding peanut butter chips next time. The one thing I will say, in the written recipe instructions, it doesn’t say where to add the vanilla. But these are so so good!
