    This is the ultimate Cinnamon Crunch Popsicle that will bring out the kid in you! Sweet, creamy, and made with only 4 ingredients- vanilla yogurt, milk, cinnamon, cinnamon toast crunch cereal.

    Top Tip

    To prevent ice crystals in popsicles, use whole milk Greek yogurt.  It has a lower water content than regular yogurt.  Full fat coconut milk from a can is another great option.

    Variations

    • Chocolate Drizzle: After unmolding the popsicles, drizzle melted chocolate over the top and sprinkle with cinnamon sugar for a decadent twist.
    • Sweetener: If you want the popsicles to be more sweeter, add couple teaspoons honey, maple syrup, agave nectar, brown rice syrup, brown sugar or granulated sugar as a sweetener.
    • Chai Spice: Replace the cinnamon with chai spice mix for a warm and aromatic flavor profile.
    • Vanilla Bean: Add vanilla bean paste or pure vanilla extract to the popsicle mixture for a classic vanilla flavor with a hint of warmth from the cinnamon.
    • Coffee Infusion: Infuse the popsicle mixture with brewed coffee or espresso for a caffeinated pick-me-up with a hint of cinnamon crunch.

    Substitutions

    • Cinnamon Crunch: If you don't have cinnamon cereal, you can use crushed graham crackers or granola mixed with cinnamon as a crunchy topping. Or use your any of your favorite cereals and omit the cinnamon.
    • Greek Yogurt: Replace the yogurt with coconut yogurt or another non-dairy yogurt for a dairy-free version.
    • Spices: Experiment with different spices such as nutmeg, ginger, or cardamom to add variety to the flavor profile.

    Storage

    • Freezer Storage: Once the popsicles are fully frozen, remove them from the molds and transfer them to an airtight container or freezer bag. Place them in the freezer to prevent freezer burn and maintain freshness.
    • Individual Wrapping: If desired, wrap each popsicle individually in wax paper or plastic wrap before placing them in the container or bag. This helps prevent them from sticking together.
    • Labeling: Label the container or bag with the date of preparation to keep track of their freshness. Popsicles can typically be stored in the freezer for up to 2-3 months.
    • Avoiding Odors: Store the popsicles away from strong-smelling foods in the freezer to prevent them from absorbing odors.
    • Thawing: When ready to enjoy, remove the desired number of popsicles from the freezer and let them thaw for a few minutes at room temperature before serving. Alternatively, run the molds under warm water for a few seconds to help release the popsicles.
