    Top Tips

    • If you prefer to remove the membranes (pulp) from the grapefruit, be sure to strain the juice before using it.

    Variations

    • You're welcome to skip the strawberries, but they play a crucial role in balancing the tartness of the grapefruit and lemon.
    • If you're unable to get popsicle molds, feel free to use what you have available. At the 2 hour mark, add popsicle sticks into the center of the molds. (After 2 hours of freezing, the lemonade should be fairly frozen, which will keep the sticks from sliding around.)
    • Enhance the refreshing flavor by incorporating herbs, like fresh mint leaves, thyme, basil, or even rosemary!
    • IF you don't want to use the simple syrup recipe (water and sugar), use very sweet honey.
    • To enhance the flavor, incorporate approximately ¼ cup of fresh lime juice.

    Substitutions

    • Feel free to use your preferred grapefruit variety, such as ruby red grapefruit or pink grapefruit, or even a combination of grapefruit juices, instead of the fruit itself.
    • If you're unable to find fresh grapefruit or fresh lemons, feel free to substitute. Make sure to check if the juice already contains added sugar. If it does, you may want to reduce the sugar.

    FAQ

How do you make popsicles creamy not icy?

To make popsicles creamy instead of icy, incorporate ingredients like yogurt, cream, or coconut milk into the mixture before freezing. Many people use cornstarch.

How do you make soft popsicles?

To make soft popsicles, consider adding ingredients like gelatin or corn syrup which can lower the freezing point of the mixture and prevent it from becoming too hard when frozen.

What if I don't have grapefruit?

That's okay! You can use oranges or any citrus you have available.
