    What is Ice Scramble?

Ice scramble is a famous frozen dessert and one of the favorite cold snacks or street foods in the Philippines. People think it first came from Iloilo, a place in the Philippines.

The dessert got its name because people mixed or "scrambled" the ingredients with the straw that came with it.

Traditional Filipino ice scramble is made of shaved ice, banana extract, evaporated milk, sugar (or condensed milk), and a little pink food coloring. It's a bright and fun dessert for kids to eat! On top, you can add different things like marshmallows, pinipig (rice krispies), and milk powder.

Street vendors usually sell these outside elementary schools, and kids and adults love eating them as a dessert after school. It's the best treat any Filipino kid could ever want!

    Substitutions

    • Use agave or cane sugar if you don't have refined sugar.
    • Try different syrups like strawberry or mango for a new taste.
    • Use skimmed milk or almond milk instead of powdered milk for a different texture.

    Variations

    • Adjust the amount of sweeteners to make it as sweet as you like.
    • For banana-flavored scramble, use 1 teaspoon of banana essence instead of pineapple syrup.
    • Toppings options: Milk powder, pinipig (rice crispies), candy sprinkles, wafer sticks, tapioca pearls, strawberry syrup, chocolate chips and mini marshmallows.

    Storage

Unfortunately, this delicious treat is best served immediately!

    Top Tips

    • Prepare all ingredients beforehand and store them in the fridge.
    • Use store-bought shaved ice if you’re in a hurry.
    • Don’t let the ice melt before mixing; it will dilute the flavors.

    Frequently Asked Questions

Do I need to use shredded ice?

No, but it's best to use shredded ice because it gives the ice scramble a slushy texture.

What is another way to shred the ice?

If you have a large block of ice, you can use a knife and cut the ice starting with the corners. Or use a blender and and blend the ice, or wrap a handful of ice in tea towels and smash with a rolling pin or meat tenderizer.

    Can I use different syrups?

Absolutely! Feel free to experiment with flavors like strawberry, mango, or even chocolate syrup.
