    Banana Bread is one of the most classic quick bread recipes and go-to recipe when you have overripe bananas! This recipe is mildly sweet and definitely moist which everyone will love!

    Health Benefits of Bananas

    • Contains nutrients that have the ability to moderate blood sugar levels
    • It reduces appetite by decreasing the process of stomach emptying
    • It has a fair amount of dietary fiber which aids in digestion
    • Supports good heart health because it contains potassium that can help lower blood pressure

    Substitutions

    • Butter: Replace butter with coconut oil or vegetable oil for a dairy-free option.
    • Brown Sugar: Use white sugar, honey, or maple syrup as a substitute for brown sugar.
    • Eggs: Use flax eggs (1 tablespoon flaxseed meal + 3 tablespoons water per egg) for a vegan option.
    • Bananas: If you don’t have enough bananas, you can replace part of the mashed bananas with applesauce or pumpkin puree.

    Variations

    • If you love a hint of chocolate in your super moist banana bread recipe, add in a handful of chocolate chips.
    • To add a wonderful texture to your loaf of banana bread, include chopped walnuts or pecans and you may call it Super Moist Banana Nut Bread 🙂
    • You can spread cream cheese frosting over the cooled banana bread for a delicious, tangy-sweet topping.

    Storage

    • Once cooled, wrap the banana bread in plastic wrap or store it in an airtight container. It will stay fresh at room temperature for up to 3 days.
    • For longer storage, freeze the bread by wrapping slices individually in plastic wrap and placing them in a freezer-safe bag.
    • To thaw, leave it out at room temperature or warm in the microwave for 15-20 seconds.

    • Have you heard of adding Greek yogurt or sour cream to a bread recipe? You can add a fourth of a cup of your favorite brand. Plain yogurt gives that tangy flavor to the banana bread and makes the bread moister.
    • You can make banana muffins out of this recipe by simply baking them in muffin pans.

    Listed below are all the ingredients you will need:

    • all-purpose flour
    • baking soda
    • salt
    • unsalted butter, at room temp
    • brown sugar
    • eggs
    • bananas, mashed
    • cinnamon
    • vanilla extract
    • chopped pecans or walnuts (optional)

    Instructions

    These seemingly unpleasant-looking overripe bananas are the best state to make them into a delicious banana bread or cake recipe!

    I'll let you in on a little secret 🙂 I used vanilla butternut for a little extra yumminess and moisture!

    To save time, preheat the oven to 350 degrees. Mash bananas in a bowl and set them aside.

    Whisk the flour, baking soda, and salt in a bowl and set aside. Then, cream butter and brown sugar until completely mixed together. To the creamed butter mixture, add the eggs, mashed banana mixture, cinnamon, and vanilla extract. Blend completely using an electric mixer.

    Mix the dry ingredients into the wet ingredients a little at a time. Blend thoroughly but don’t over-mix. If using a stand mixer, scrape down the sides of the mixing bowl so there are no lumps of flour left. Pour into a well-greased loaf pan.

    Bake on the lowest rack in your oven for 55-60 minutes. When it’s done you should be able to insert a toothpick and it will come out clean. If the top is getting too burnt and the inside is not done, cover it with aluminum foil and bake for another five minutes.

    Let it cool on a wire rack before cutting with a serrated bread knife. This recipe makes 1 loaf of super moist banana bread.

    Why doesn't my banana bread taste like banana?

    If your bananas aren't ripe enough, they won't have the strong banana flavor needed for the bread. Over ripe bananas are ideal because they bring more sweetness and flavor.

    Why did my banana bread not rise much?

    Your banana bread may not have risen if you didn’t use enough leavening agent (like baking soda) or if it was expired. Overmixing the batter can also result in a dense loaf that doesn't rise well.

    What happens when you put too much banana in banana bread?

    Adding too much banana can make the bread too dense and heavy, possibly resulting in a wet or mushy texture. It may also affect the bread’s ability to rise properly.

    Ingredients

    • 2 cups all-purpose flour

    • ¼ teaspoon salt

    • ¾ cup brown sugar
    • 2 eggs
    • 4 overripe bananas mashed
    • ½ teaspoon cinnamon
    • 1 teaspoon vanilla extract*
