    This easy 3 ingredient oat cookie recipe is the perfect vegan treat when you want something sweet without the fuss. It is totally dairy-free, plant-based, refined sugar-free, and flour-free.

    Perfect for busy mornings, post-workout fuel for a protein source, or kid-friendly baking, these easy cookies come together in less than 20 minutes. You just mash the bananas, fold in the oats and your extra ingredient, scoop them onto a tray, and bake until golden brown.

    Ingredients

    These are the ingredients that you will need:

    Instructions

    In a large mixing bowl, add 2 bananas and mash them. Use very ripe bananas. They taste so much better when baked and are easier to mash.

    Gradually add quick oats to the mashed bananas.

    Then add raisins to the mixture. Though this is optional, you can also add some cinnamon for that extra flavor.

    Scoop the cookie dough onto your rimmed baking sheet with parchment paper on top.

    Bake for about 15 minutes until they are slightly brown on the edges.

    Substitutions

    • Instead of Bananas: Swap 1 medium banana with ½ cup of applesauce, ½ cup of pumpkin puree, or ½ cup of mashed sweet potato. If using pumpkin or applesauce, add a tablespoon of honey or maple syrup if you like them sweeter.
    • Instead of Rolled Oats: Use quick oats (they make a softer cookie) or rolled quinoa flakes. If you only have steel-cut oats, pulse them in a blender first so they aren't too crunchy.
    • Instead of Peanut Butter: Use almond butter, cashew butter, or sunflower seed butter (great for nut allergies). Tahini also works if you like a slightly savory, nutty vibe.

    • Chocolate Peanut Butter: Use banana, oats, and peanut butter, then stir in 2 tbsp of cocoa powder and a handful of dark chocolate chips.
    • Cinnamon Raisin: Mash your banana and oats, then mix in ½ tsp of cinnamon, a dash of nutmeg, and a small handful of raisins or dried cranberries.
    • Blueberry Lemon: Use applesauce as your base instead of banana, then fold in fresh blueberries and a pinch of lemon zest.

    Storage Tips

    • On the Counter (2–3 Days): Put them in a sealed plastic container with a paper towel on the bottom. The paper towel stops them from getting soggy.
    • In the Fridge (Up to 5 Days): Put them in a sealed container or bag. Put wax paper or baking paper between layers so they don't stick together. Cold cookies get a nice, chewy feel.
    • In the Freezer (Up to 3 Months): Lay them flat on a plate or tray in the freezer for one hour so they don't freeze into a single big clump. Then move them into a freezer bag. To eat, pop them in the toaster oven for a few minutes to warm them up.
