If Saint Patrick's Day is just around the corner, why not get festive? These cookies are beginner-friendly and easy to make at home. I even used my Rolled Sugar Cookies. No fancy tools are needed, just simple ingredients you likely already have.
They’re also family-friendly and perfect for kids who want to help decorate. Making them vegan or dairy-free is easy with a few substitutions, so everyone can enjoy. I also used Betty Crocker's cookie icing and instantly fell in love with it! It was very easy to squeeze out the icing and hold it without getting cramps in your hand.
Also, you are probably wondering why I get hand cramps just holding the icing bag. Well, I've been playing the piano since I was 5, and pulled a nerve or something... I can't remember exactly. Anyway, you must try the Betty Crocker icing, it's awesome!
Additionally, vanilla extract adds a hint of natural flavor. Butter provides richness while offering a small boost of healthy fats for energy.
Ingredients
Listed below are all the ingredients you will need:
For the Sugar Cookies:
- Unsalted butter
- Granulated sugar
- Egg
- Vanilla extract
- All-purpose flour
- Baking powder
- Salt
- Green icing
- Green sprinkles
For Decorating:
- Edible glitter
- Mini shamrock decorations

Instructions
Make the Cookie Dough:
1. In a large or medium bowl, cream together the butter and sugar until light and fluffy.
2. Add the egg and vanilla extract, and mix until fully combined.
3. In a separate bowl, whisk together the flour, baking powder, and salt.
4. Gradually add the flour mixture to the wet ingredients. Mix until a soft dough forms.

5. (Optional) Wrap the sugar cookie dough in plastic wrap and chill for 30 minutes for easier handling.
Bake the Cookies:
6. Preheat oven to 350°F (175°C).
7. Using a rolling pin, spread the batter to about ¼ inch thick on a lightly floured surface.
8. Use a round cookie cutter or shape of choice. Place cookies on a baking or cookie sheet with parchment paper.

9. Bake for 8–10 minutes, or until the edges are just barely golden.
10. Remove from the oven and immediately use a Shamrock cookie cutter to cut out the shamrock shape while the cookies are still soft.
11. Let cool in the pan for 5 minutes. Then transfer to a cooling rack to cool completely.
Decorate the Cookies:
12. Once cookies are completely cooled, ice with green icing.

13. Decorate with sprinkles or edible glitter as desired.
14. Let icing set before serving or storing. And your Shamrock Cookies are ready to serve!
