Saint Patrick’s Day is around the corner and why not get festive and make some Shamrock Cookies?! These were pretty easy to make and I used my rolled sugar cookie recipe to make these delicious cookies! My favorite part of making these cookies was icing these cookies! I used Betty Crocker’s cookie icing and I fell in love with it, because it was very easy to squeeze out the icing and hold it without getting cramps on your hand.
You are probably wondering why I’m getting hand cramps just holding the icing bag, well I’ve been playing the piano ever since I was five years old and apparently I pulled a nerve or something… I can’t remember. Anyway, you must try the Betty Crocker icing, it’s awesome!
Tips on How to Make Shamrock Cookies:
- I like to keep my cookie dough in the chiller or freeze them for about 15 minutes before baking. This allows the butter to chill up that way when they bake, they don’t spread as much and you’re left with a thicker, chewier cookie.
- Before mixing the dry ingredients like all-purpose flour, baking soda, and brown sugar, sift them individually. This easy but very important step would make your cookies nice and evenly textured. It wouldn’t be fun biting into a lump of flour in between 🙂
- Make sure to leave out enough space in between your cookies on the cookie sheet. In that way, they won’t stick together after baking.
