Cookie Dough Bites

This fantastically easy Cookie Dough Bites takes only 10 minutes to make and it is great to make on a hot day because there is no baking required.

I live in Southern California and during the summers, the temperature hits as high as 110 degrees Fahrenheit. So making these no bake cookie dough bites is perfect for this hot weather.

Cookie Dough Bites
 
Ingredients
  • 1 cup all purpose flour
  • ½ cup butter (1 stick), softened
  • ⅓ cup brown sugar
  • ⅓ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¾ cups mini chocolate chips
Instructions
  1. In a large bowl add butter, brown sugar, granulated and beat until light and fluffy.
  2. Add vanilla extract, salt and mix until well combined, then add flour.
  3. Add mini chocolate chips and mix.
  4. Roll into 1 inch balls and refrigerate for 15-20 minutes.

I am a tween and I believe I am at an intermediate level (I make a lot of deserts for family gatherings, bake cookies for my neighbors every year, and some have asked to buy things from me), but I was wondering if you could do simple one severing or two recipes so you could quickly whip up something for you and a friend. I like your channel and LOVE this recipe( I halfed it so that I only made a few but regret that because they are SO good!). Keep doing what your doing.   19. Hey! I tried doing this but it was too moist! I tried adding flour but still a little too moist 🙁 Also, it was a bit yellow because I didn’t have any vanilla extract available.

    However, I tried the no bake cheesecake recipe and it went so well!

    P.S. First time baker/cook. Newbie at this, would appreciate easy and no bake recipe because we dont have any oven 🙁

  21. Hi there! Can I make these ahead and keep in fridge? I’m guessing bringing them to room temperature would be important for the taste.

    • Yes, you can but make sure you keep them well covered and don’t leave them in the fridge for too long because like any other food it can become stale. 🙂 sorry for the late reply!

  23. I made this but I used maple syrup as a substitute for vanilla extract and it came out runny so added more flour. It wasn’t all crumbly like yours was? Is that bad?

    • Hi Nani! Sorry for the late response! :/ Here’s the thing with this recipe since it has few ingredients it’s hard to substitute. If you were to replace the vanilla extract I suggest replace it with another extract like almond! (: Did it taste good at least with the maple syrup? Anywho, I hope this comment helps you!!!
